Cinnamon, a bushy evergreen tree in the family of Lauraceae and both the bark and the leaves are aromatic. It is used in cooking as well as for medicinal purposes given its anti bacterial and anti fungal properties. The inner bark of the tree is scraped, cleaned and dried to obtain the valuable spice. The produce is taken once a year and the bark is allowed to re-grow. We have maintained this organically.
